The green chile provides a vitamin c boost, relieves blocked sinus passages and, generally, increases sensations of well being and coziness. I normally make a double batch of this soup so I have leftovers for lunch.
This is my go-to when I have leftover chicken. I usually saute onion and garlic before adding more butter and making the roux. The last time I made it (last night) I accidentally used a bag of Sandia Hot chiles from the freezer instead of the milder Big Jims. The soup was FIERY but oh so tasty! Since it was really too hot to eat as is, we decided to make layered enchiladas the next night using the soup as a sauce. Absolutely awesome enchilada sauce too!
It was heartbreaking to find when we moved from Colorado to SW Florida to discover that nobody even knew what green chile is. We had it shipped from New Mexico and roasted it ourselves. That works, but the $$$!
This was sooo delicious and super easy to make! We added more veggies and green chiles than it called for (we needed to use them before they went bad!), it was perfect! I also used heavy cream instead of cashew cream since we already had an open container in the fridge. Next time I think I will try it with the cashew cream.

I couldn't find the cilantro and lime rotel so I kinda improvised and added some extra chopped cilantro and lime when making the rest of the recipe. I also used the "hot" green chiles as I wanted something more spicy and it was really good. Does anyone know if I can freeze this and reheat it? I'd like to freeze it in small portions for quick meals.
Thank you for creating this copycat recipe. We thought the dumpling component of the recipe was spot-on and made excellent dumplings for the chicken and broth/gravy. However, the recipe only calls for salt and pepper, which we did not feel was an adequate amount of seasoning for chicken, a flavorless protein. We added thyme, rosemary and garlic salt and we were very pleased with the result. I also question the cook time for this recipe; 5 minutes? How is that possible? The chicken cooks for 15 minutes and the dumplings for 20, so I think there may be an error in the heading of the recipe. Overall, I would definitely make this again.
Here in St. Louis, we order them often when picking up a fried fish or chicken dinner, or if we're out for some BBQ. I know they're canned green beans, but they are seasoned and cooked with bacon or ham and are just so dang good!
